One thing I mention to a lot of my guests and readers is that it can be tough to find a good, non-French restaurant in central Paris, especially one that's not overpriced or over-touristy. Khatag, a Tibetan restaurant located just around the corner from the Pompidou Center, definitely fits the bill! Khatag serves traditional Tibetan cuisine and has a wonderful ambience that's colorful, exotic, and not at all Parisian, which can occasionally be a very welcome relief if you've been dining in endless, identical French bistros all throughout your vacation. Khatag has a very calm and quiet atmosphere for a restaurant situated in such a bustling neighborhood.
